In yet another attempt to rid our house of pantry/ freezer items, I am making a banana-coconut bread. There are both bananas and left over coconut in the freezer so I am making something based on this recipe: http://nutritiontokitchen.com/2009/02/06/banana-coconut-bread/

Did it! It was done at 40 min but at 30 min in I put honey and about a 1/2 cup of coconut on top for a nice crisp topping. Also, I doubled to cinnamon and added a teaspoon on almond extract! Also, I replaced 1 cup of ww flour with oats. Lastly, I used about 1/2 cup maple syrup rather than sugar and a full half cup of butter. A lot of changes, true. However, it turned out really great!
